I love potato recipes. There is something so comforting about a delicious garlic butter potato.

This smashed lemon potatoes takes that classic garlic butter potato pairing and gives you new potatoes to add to your side dish recipes.

A smashed lemon potatoes recipe still has a great creamy inside, but it also has deliciously crispy edges. It is one of my favorite ways to make potatoes.

And because it is a potato dish, it goes with almost any other meal! You can serve this with grilled foods, casseroles, soups, and anything you might have for dinner.

Whether you are going to eat lemony smashed potatoes for the first time or just need good food on the table, this dish is perfect!

Pro Tip: Because larger potatoes will increase the cooking time, you really want to choose small potatoes that can fit 2 in the palm of your hand. If you cannot find small ones, baby potatoes will do. Try to use baby yukon gold potatoes for the same creamy flavor and texture, though red potatoes can be used in a pinch.

How to Make Lemon Smashed Potatoes:

  1. Boil potatoes until tender.
  2. Drain and allow potatoes to sit and rest.
  3. Combine butter, lemon juice, garlic, parsley, salt, and pepper.
  4. Use the bottom of a glass or a potato masher to lightly smash potatoes on a large baking sheet lined with parchment paper.
  5. Pour lemon mixture over each smashed potato.
  6. Roast potatoes until golden brown and crispy.
  7. Garnish and serve with your favorite toppings like sour cream, fresh herbs, and lemon zest.

Pro Tip: Letting the potatoes sit and rest after boiling will give them a better texture.

Yes you can make this lemon and herb smashed potatoes recipe ahead of time! I like to prepare these the day before and follow the steps up until baking. Then I refrigerate, and bake fresh when ready to eat.

How to Store Leftover Lemon Smashed Potatoes:

Store leftover lemon garlic smashed potatoes in an airtight container in the refrigerator for up to 2 days. I like to portion them in individual containers with other leftovers to make easy individual meal containers.

Can You Freeze Lemon Smashed Potatoes?

Yes you can freeze lemon smashed potatoes recipe! This is a great way to meal prep a perfect side dish you can use another time. 

I like to bake this smashed potato recipe, let them cool, then transfer to freezer safe storage to let them sit until I need them. Then just pop back in the oven or air fryer and heat until warmed through.

However, if it is easier for you to store, boil the potatoes and let them cool. Then freeze them on a baking tray for 1 hour until frozen.

After frozen, transfer them to a freezer bag and place the lemon garlic mix in a separate bag inside like a sauce packet. When you are ready to serve them, pull them out the night before to thaw in the fridge. Then smash, smother, and bake until crispy and golden.

I prefer the easier cook from frozen method because I do not always plan in advance, but I do agree you get better texture if you freeze them after boiling.

Instructions

  1. Preheat oven to 400*F
  2. Bring a large pot of water with 1 teaspoon salt to a boil.
  3. Boil potatoes for 25 minutes.
  4. Drain potatoes and let sit for 5-10 minutes.
  5. In a small bowl combine butter, lemon juice, garlic, parsley, salt and pepper.
  6. Place potatoes on a bakin gtray and lightly smash with a potato masher or cup.
  7. Pour lemon mixutre on top of each potato.
  8. Bake in oven for 15-20 m inutes or until golden.
  9. Remove, garnish with tartar sauce and serve.
