- 1 Tablespoon spring onion, diced (white and light green parts)
- 1/4 cup yellow bell pepper, diced
- 1 medium ripe tomato, diced
- 1 garlic clove, minced
- 1/4 cup olive oil
- 1 Tablespoon sherry vinegar
- 1/2 teaspoon salt
- Slivered almonds for garnish (optional)
