  2. Melt butter in a saucepan, add ramen noodles, almonds, and sesame seeds, and toast.
  3. Drain the toasted mixture on paper towels.
  4. Add the dressing ingredients in a jar and mix or shake well.
  5. Combine chilled cabbage and green onions with the toasted mixture in a large bowl.
  6. Toss with the dressing.
  7. Let the salad sit for 20 minutes, then toss again and serve!

Pro Tip: Letting the salad sit for 20 minutes allows the flavors to meld together. Skipping this step will give you a fumi salad with much less flavor.

Is Fumi Salad vegan?

This salad recipe with cabbage and noodle is not vegan since it toasts the crunchy topping in butter.

However, you can easily make this recipe vegan by toasting the topping in your favorite vegan oil (olive oil, sesame oil, avocado oil). You also need to double check your ramen noodles. 

Usually the noodles by themselves are vegan. Some companies will add egg or whey to the noodles. While many broths are not vegan, you can find vegan ramen noodle options, and ones without a seasoning packet are your best bet.

How to Store Fumi Salad:

Store this salad in an airtight container in the refrigerator for up to 3 days. If you are making this to eat later in the week, keep the dressing and crunchy topping separate and add it just before serving to maintain the salad’s crunch.

Even dressed, this salad will have great flavor for a couple days, but the brown almonds and toasted ramen noodles may loose their crunch. For easier access to a great salad later in the week, store the crunchy topping and dressing separate and place cabbage mix in its own container.

Can You Freeze Fumi Salad?

No, you should not freeze fumi salad. Freezing this ramen cabbage salad is not recommended as the texture of the cabbage and ramen noodles will be compromised. It’s best enjoyed fresh.

Instructions

  1. Combine cabbage and green onions in a bowl and put in the fridge to keep chill while making rest of salad.
  2. In a saucepan, melt butter and add almonds, ramen noodles and sesame seeds and toast.
  3. Drain on paper towels and set aside.
  4. While noodles cool to room temperature, make salad dressing.
  5. In a jar combine sugar, black pepper, salt, vinegar and oil. Mix well.
  6. Remove cabbage and onions from fridge.
  7. Add ramen noodle mixture to salad and toss well.
  8. Add dressing and toss again.
  9. Let sit for 20 minutes before serving.
  10. Toss again before you serve.
