This beet blueberry salad is a summer salad that finds its way into my rotation year round. 

Whenever it is blueberry season, this is one of my favorite things to serve. Loaded with antioxidants, it is a great choice for anyone looking to increase their healthy eating menu.

It has amazingly great flavors that just pop with the creamy feta dressing.

And a small bowl of this over your favorite leafy greens makes this a great source of antioxidants.

It is a perfect way to have delicious, healthy food as a casual weekday lunch or a formal dinner party. You and your guests are going to love this blueberry and beet salad.

What Ingredients are in Beet and Blueberry Salad?

  • Cooked Red Beets: earthy with a dark beautiful color and flavor, these are the star of the salad, giving a rich flavor base.
  • Radishes: crisp and slightly peppery, these add a fresh crunch.
  • Fresh Blueberries: bursting with sweetness, these balance the savory flavors.
  • Feta Cheese: creamy and tangy, it adds balance to the earthiness of the beets and the dressing.
  • Greek Yogurt: gives a perfect texture to the dressing.
  • Lemon Juice: brightens the dressing with a citrus kick.
  • Fresh Chives: adds a mild onion flavor.
  • Olive Oil: blends the dressing together.

Pro Tip: If you only have raw beets in your grocery store, it is very easy to boil (until fork tender), peel, and chop your own beets into small pieces for the salad. Choose smaller beets as the small to medium size of the beets means more flavor.

If you choose to buy pre-cooked beets, choose roasted beets or cooked beets that don’t add extra flavors. You want a plain beet flavor to blend with the sharp dressing in this salad.

How to Make Beet and Blueberry Salad:

  1. Combine beets, radishes, and blueberries in a bowl.
  2. Blend feta, yogurt, lemon juice, and chives in a processor.
  3. Add olive oil until desired consistency.
  4. Drizzle salad with dressing or serve on the side.

Pro Tip: Try making a red and golden beet salad by mixing beets! The golden beets look great next to the red beet, white radish, and blueberries.

Keep in mind, the yellow beets are sweeter, so keep a mix of red and yellow to balance the earthy sweetness of the beets in the salad.

Can I Add Lettuce to Beet and Blueberry Salad?

Yes you can add lettuce to blueberry and beet salad! Toss in your favorite lettuce or mixed greens and scoop this radish and blueberry salad on top for a perfect green salad any time you want.

Pro Tip: I love arugula salad, and the creamy dressing and beet mixture go perfectly with the peppery bite of the arugula. Dish a large bowl of this on a bed of greens for a perfect main dish.

Can I Freeze Blueberry and Beet Salad?

No, you cannot freeze beet and radish salad and have it thaw to the same consistency. When you freeze fruits and vegetables, the water inside them turns to ice. 

The sharp ice crystals damage the structure of the cells in the fruits and veggies. When they thaw, the structure cells are damaged which gives you soggy produce instead of fresh and crisp produce.

If you freeze this, plan to use it in a smoothie or baked dish.

How to Store Leftover Beet Blueberry Salad:

Store leftover beet salad with blueberries in the refrigerator in an airtight container. For best food safety practices, keep your beet salad on ice if serving at an event where it will sit out longer than 1 hour.

How Long Does Beet and Blueberry Salad Last?

Blueberry salad with Beets will last about 2 days if properly stored. After that, the texture of the salad will start to change.

You will love our Beet and Blueberry Salad. Simple to make, and bursting with freshness – it is the perfect side or main for any occasion.

Instructions

  1. Make the dressing. Combine feta cheese, Greek yogurt, lemon juice and chives in a blender.
  2. As the blender is going, add olive oil until desired consistency is achieved. 1/8 cup will be the consistency of blue cheese dressing. Anything more will make it thinner. Set dressing aside.
  3. Prepare beats if not already prepared.
  4. Combine beets, radishes and blueberries in a large salad bowl.
  5. Top with dressing or serve it on the side.
