Instructions

  1. Preheat oven to 350*F.
  2. Line baking sheet with tin foil. Place rack over foil.
  3. Combine pineapple juice, lemon grass, lime, coconut, maple syrup honey and ginger in a saucepan and simmer over medium-low heat for five minutes.
  4. Remove lemongrass.
  5. Add nuts.
  6. Stir well to coat.
  7. Remove from heat and let cool while you prepare the bacon.
  8. Cut bacon lengthwise, then in half crosswise to make four strips out of each bacon slice.
  9. Wrap nut in center of bacon strip.
  10. Place bacon wrapped nuts on the rack.
  11. Drizzle (or brush) remaining pineapple mixture over top of nuts.
  12. Bake at 350 for 22 minutes. Less time if you want the bacon less crispy.
  13. Be sure to turn baking sheet half way through your cooking time to even things out.
