- In a small bowl, whisk together the dressing ingredients until smooth.
- Add the cooled potatoes and remaining ingredients to a large bowl.

How Long Do You Boil Potatoes for Potato Salad?
You’ll want to boil your diced potatoes for about 10-12 minutes for this Mustard Potato Salad Recipe. They should be fork-tender but still firm enough to hold their shape in the salad. Be careful not to overcook them, as mushy potatoes will make the salad too soft.
What Are the Best Potatoes for Mustard Potato Salad?
The best kind of potatoes for potato salad are waxy potatoes like red potatoes or yukon gold potatoes. They hold their shape well after boiling and have a creamy texture that works perfectly in this salad.
Avoid starchy potatoes like Russets, as they tend to fall apart in this mayo potato salad. There are other varieties of potato with a better texture.
Pro Tip: If you are making a red potato salad, leave the skins on for a pop of color and extra nutrients in the dish.

Can You Freeze Mustard Potato Salad?
No, mustard potato salad doesn’t freeze well because of the mayonnaise in the dressing. Freezing can cause the texture to change, making the potatoes watery and the dressing separate. It’s best to make this good potato salad fresh or store it in the fridge for a few days.
How Long Is Mustard Potato Salad Good For?
Once made, mustard potato salad will last in the fridge for up to 3-4 days and still have a fresh flavor. Just be sure to store it in an airtight container.
As with any dish containing eggs and mayonnaise, if it’s left out for more than two hours, it’s best to discard it to avoid any food safety issues.
Pro Tip: I always make this the night before so the flavors can meld. I think it tastes better the second day.
