Marinated Shrimp
- 2 large cloves of garlic, minced
- 2 chipotle peppers in adobo, minced
- Juice of 1 lemon
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds raw medium sized shrimp, peeled, cleaned and deveined
Salad Dressing
Instructions
- In a small mixing bowl, combine garlic, chipotle peppers, lemon juice, olive oil, salt, black pepper. Mix well.
- Add shrimp and toss to coat thoroughly.
- Cover and refrigerate for 30 minutes.
- While shrimp is marinating, make the salad dressing.
